Seeming as I got engaged a week ago and have been in celebration mode ever since... It has been awhile since my last blog. But before I could put off, post-pone or even worry about catching up on many responsibilities. I thought it would be nice to jump right back into it and start with a fresh delicious hummus recipe I just whipped up.
Slightly Spicy Roasted Red Pepper Hummus
Ingredients:
1 can (15 oz) chickpeas
Juice from about 1/2 a lemon
2 tbsp Olive Oil - or a little more in case you run out of tahini
1/3 cup Tahini - or 2 tbsp b/c I just ran out.
1/4 tsp cayenne pepper
1/4 tsp cumin
1 Red Bell Pepper (roasted)
Toss it in the food processor or blender and... et voila!
